Made from 90% oloroso (palomino) and 10% pedro ximenez with 5 years together in bota, the sweet and savoury blend is in perfect harmony.

  • Deep amber in colour with an orange rim, pronounced aromas of walnuts, marmalade and sultanas leap from the glass.
  • A zinging bitter orange freshness is replaced by fried corn and biscuit on the finish. The texture is velvety, but not overly rich

The name "Diatomists" pays tribute to the artisans skilled in the intricate art of diatom arrangement. Diatoms, single-cell algae, create intricate glass shells around themselves. Remarkably, five million years ago, the region of Jerez, where this exceptional sherry originates, was underwater.

This unique historical setting explains the soil's extraordinary richness in diatom fossils microscopic wonders. Crucial for vine growth in the region's challenging climate of hot, dry summers and sporadic heavy rainfall. The soil's enhanced porosity, courtesy of diatoms, acts as a natural reservoir, preserving moisture. Providing vital water reserves for the vines during the extensive and sunny growing season.
