Cantalici Vin Santo Del Chianti Classico 2011

A typical Tuscan sweet dessert wine, to accompany the famous almond cantuccini or to appreciate after a meal, alone. Great with pastries, cakes and cheeses.
Selection of the grapes is very carefully by hand then leaving them on racks in airy rooms until January. The next process consists of pressing and fermentation in small oak barrels called "caratelli". Storing the juice in the loft over a period of years.
During fermentation there are seasonal and daily temperature changes, with activation and slowdown steps. This very long process, led by autochthonous yeasts, gives the wine its peculiar and unique characteristics of colour and aroma.
Cantalici is run by two brothers, Daniele and Carlo Cantalici. They chose to start producing their own wine organically after years spent working in tight connection with Chianti Classico vineyards.
In their winery in Gaiole you'll find a great "family" of people collaborating with to share warmth, hospitality and the flavours of their homeland.
